Chargrilled Chilli Lamb


This healthy lamb steak dinner ticks all the right boxes - lower GI, low kilojoule and diabetes-friendly.

The ingredient of Chargrilled Chilli Lamb

  • 500g kumara orange sweet potato peeled cut into 3cm pieces
  • 600g eggplant cut into 4cm pieces
  • zest and juice of 1 lemon
  • 2 1 2 tablespoons olive oil
  • 3 garlic cloves crushed
  • 2 teaspoons piri piri seasoning
  • 300g can chickpeas rinsed drained
  • 2 tablespoons chopped parsley
  • 4 lamb leg steaks

  • preheat oven to 220u00b0c arrange kumara and eggplant on a large baking tray lined with baking paper
  • combine lemon rind and juice 2 tablespoons olive oil garlic and piri piri in a small bowl drizzle half over vegetables tossing roast for 20 minutes add chickpeas roast for 5 minutes stir parsley into remaining lemon mixture and set aside
  • brush lamb with remaining olive oil preheat chargrill to medium high add lamb cook 3 to 4 minutes each side serve with vegetables and drizzle with remaining lemon mixture
