A Sloppy Joe is just as its name suggests - rather than the mince being formed into a patty, its cooked with tomatoes, onions and other flavourings, similar to a bolognese sauce, then dolloped into a burger bun or hot dog roll.

- 2 teaspoons olive oil
- 1 2 small brown onion finely chopped
- 1 garlic clove crushed
- 250g lean beef mince
- 1 small 100g zucchini grated
- 1 2 small red capsicum finely chopped
- 1 2 teaspoon mustard powder
- 1 tablespoon brown sugar
- 2 tablespoons cider vinegar
- 1 teaspoon worcestershire sauce
- pinch of chilli powder optional
- 410g can tomato puree
- 8 mini brioche burger buns with sesame seeds split toasted see notes
- carrot cut into sticks to serve
- celery cut into sticks to serve

- heat oil in a large frying pan over medium high heat add onion cook for 5 minutes or until softened add garlic cook for 1 minute or until fragrant add mince cook breaking up with a wooden spoon for 5 minutes or until browned add zucchini and capsicum cook for 2 minutes or until vegetables are tender
- add mustard powder sugar vinegar worcestershire sauce and chilli if using stir in tomato puree bring to the boil reduce heat to low simmer for 12 to 15 minutes or until thickened
- spoon 2 tablespoons mince mixture onto each bun base sandwich with bun tops serve with carrot and celery sticks
